ABSTRACT
Operational efficiency in the liquor industry is defined as the ability of companies to maximize their production by making optimal use of resources, time and costs, without affecting quality. In this context, this study analyzes how to evaluate the operational efficiency of the liquor industry in the city of Quito, Ecuador. The objective is to design key performance indicators (KPI) to measure the operational management of the liquor industry. To this end, a mixed, non-experimental methodological approach combining surveys and statistical analysis was applied in three local companies. The results revealed adequate inventory and resource management, although deficiencies in process automation and personnel training were identified. It is concluded that, although there is a general perception of operational improvement, this is not always reflected in the data, which highlights the importance of having objective tools. The proposed KPI will facilitate the identification of weaknesses, the optimization of processes and the strengthening of the sector's competitiveness.
