Analysis of the productive reserves of the intensive farming process in an aquaculture company

It is necessary to increase the effectiveness of production chains through the organization of work, aimed at the rational management of resources and the increase of productivity. Cost analysis reveals the various factors that affect production. Aquaculture stands out as a source of foreign exchange and animal protein for human consumption. Given the importance of the fishing sector for food sustainability, its optimal productivity must be guaranteed in Cuba. The objective of the research is to analyze the productive reserves of the intensive culture process in an Aquaculture-Based Business Unit in Cuba. A procedure is developed to analyze productivity and quality costs in the entity. Productivity is assessed based on the indicators managed by the company, the costs associated with quality are identified and a causal analysis is carried out based on a Checklist. Se obtiene como resultado que en el proceso productivo acuícola existen reservas productivas relacionadas con la mala praxis durante el cultivo y transportación, y la medición de parámetros físicos del agua; a partir de estas se proponen acciones correctivas y preventivas que garanticen el uso óptimo de las reservas productivas identificadas.
