Cuyo objetivo fue determinar el efecto de la salmuera en las características físicas–químicas, microbiológicas y organolépticas en la conservación de huevos de codorniz. Para lo cual, se empleó un Diseño Completamente al Azar (DCA) en arreglo trifactorial, con dos niveles de vinagre (8 y 12%), por tres concentraciones de sal (2, 3, 4%) y dos tiempos de conservación (30 y 45 días), con tres repeticiones por cada tratamiento. Dentro de las características físicas-químicas destacaron distintos tratamientos. Los resultados alcanzados en la presente investigación demuestran la viabilidad en la industrialización de los huevos de codorniz, generando fuentes de empleo y valor agregado.Palabras clave: Salmuera, calidad organoléptica, conservación, rentabilidad. ABSTRACTThe research was carried out in the Experimental Campus "La María", premises of the State Technical University of Quevedo, located in the Mocache canton, Province of Los Ríos. The objective was to determine the effect of the brine on the physical-chemical, microbiological and organoleptic characteristics in the conservation of quail eggs. For which, a Completely Randomized Design (DCA) was used in trifactorial arrangement, with two levels of vinegar (8 and 12%), for three salt concentrations (2, 3, 4%) and two storage times (30 and 45 days), with three repetitions for each treatment. Among the physical-chemical characteristics highlighted different treatments.
